This has been a very busy week! Mat and I had a fantastic anniversary weekend and ate way more cake than we should have but it turned out great!! It's pretty late so I am going to keep this short and sweet.
Saw an old cranky looking man steal some candy from CVS the other day...I've never seen someone steal before so I made me pretty mad (even though it was just candy). I couldn't just watch and let him walk away unnoticed so as he was leaving I asked him if he was going to pay for the candy he ate. He made a big fuss "what are you going to call the police?!" and then walked over and took even more candy and walked off....At first I was pretty upset and irritated that some people feel like they are above the law. As I got into my car I kinda hit my head and thought "GEEZ! Why do I hit my head when he was the one that stole!?!" As if I was being punished for pointing out he was stealing...THEN....I thought to myself...what would Jesus have done in this situation...Thou shall not steal...the more I thought about it, I think I should have offered to pay for his candy for him instead of just point out his injustice...that is probably the only thing in my life I regret not doing...
Mat stayed home sick today with allergies and went to the doctor for some medicine. He brought me a cinnamon roll during lunch which really made my day :) He slept most of the day which was much needed! I had cafe express for lunch for Katie's birthday and they messed up my order even though I told them NO CHEESE....had to wait for them to make a new dish....Then since Mat wasn't feeling good and I didn't have time to cook, clean, and go to the gym and exercise I decided to pick up dinner for us from Jason's Deli....well I asked them to hold the provolone and even double checked with them before I paid for my order. I found cheese on my sandwich on my way home (fyi, melted cheese or cheese I can't easily peel off means I can't eat my meal and I basically have to throw it away) so I pulled a u-turn, called them up and asked them to kindly start making me a new one. When I got there they were very apologetic, reimbursed my meal and let me pick out desert from the display case. Since I don't eat cheese, Mat got a very nice surprise of TWO pieces of Turtle Cheese Cake - Definitely worth the extra wait!!
I said some prayers last night before going to bed and I felt much better than I have in about a week and a half. If you want/need me to pray for anything just let me know!! I try to pray for my family and friends often!
I'm looking forward to this weekend! Easter! :)

Love & Food & God: Epic Anniversary Weekend
Meet my husband Mat:
Mat and I have been married for 364 days. Tomorrow is our official one year anniversary which we plan to complete our epic weekend by eating the top of our wedding cake and drinking a bottle of champagne from our wedding! The single most greatest part of our marriage is the fact that we are best friends. I could spend every day of the rest of my life with this man and never get bored. Don't misread that sentence, I DO plan on spending every day with him for the rest of my life, but if we were the only two people on the planet then I would still be perfectly content.
To start off our amazing - epic- fun filled - one year anniversary weekend, we took Friday off and went strawberry picking at Froberg's Farm in Alvin, Tx. We picked 19.51lbs of strawberries and we do plan on sharing!
Oh and I forgot to mention, Mat made breakfast...blueberry muffins!! They were absolutely delicious! We have this condition...we sort of eat everything delicious that's in sight...so all 12 muffins somehow disappeared yesterday...We don't calorie count :-D (especially on EPIC weekends like this)
We spent the rest of the day lounging around the apartment (not cleaning anything - i think that should be against the law for anniversary weekends) and then we went to Maggiano's for dinner. We had a really nice time and reminisced on some of the memories from our first year being married. We totally used a coupon and a giftcard for dinner too which made for a very inexpensive meal :) We love being frugal!
Today for breakfast Mat made cinnamon rolls (he's making breakfast each day this whole weekend and Monday too)! They are absolutely delicious!! I decided to pace myself with these though because I want them to last.
We also picked up our portion of food from our local organic co-op Rawfully Organic which everyone should check out if they live in the Houston area! I think we will be switching to the Thursday pick-up location this week though because it's much closer to our apartment!

Last, but not least, since God has so graciously brought Mat into my life and blessed us more than we deserve. From "1 Peter 4:8 Above all, love each other deeply, because love covers over a multitude of sins." I love my husband so much and I find my love for him growing each and every day. I honestly could not imagine spending the rest of my life here on earth with any other human being.
